Let the seasons lead

Our menu shifts with the seasons not only because it’s better for the environment, but because seasonal ingredients taste better. This allows us to reduce food waste, avoid over farming, better quality, and a deeper connection to where our food comes from.

Less waste, more purpose

In our kitchen, we aim for minimal waste. That means creative use of offcuts, nose-to-tail cooking where possible, and composting food scraps. We’re always finding smarter ways to use every part of what we bring in.

Designed to do better

We’ve designed our building with sustainability at its heart, making conscious choices that reduce our environmental impact without compromising comfort. Our entire building features energy recovery ventilation (ERV) in all guest rooms and common areas, supported by a sealed building system and an integrated Building Management System (BMS) to optimise performance and efficiency. Throughout the property, LED lighting and double-glazed windows enhance energy savings, while under-slab and high-performance insulation help maintain comfortable indoor temperatures year-round. A 100kW solar array supplies renewable energy, complemented by EV charging stations for guests. Water-saving shower heads and mindful water use practices round out our commitment to sustainability. From the materials we choose to the systems we rely on, everything has been thoughtfully designed to tread lightly on the planet.
