Meet Chef John Hornsey

With over two decades of experience across Michelin starred restaurants and luxury venues in the UK, Caribbean and Australia, John Hornsey brings a refined yet grounded approach to Franca’s.
Originally from Essex, John’s passion for food began in childhood and led him through some of the UK’s most prestigious kitchens, including The Bath Priory, Cliveden House, and Tom Kerridge’s Hand and Flowers. Since relocating to Geelong in 2017, he has become a respected leader in the local dining scene.
At Franca’s, John blends classical European technique with a modern Australian sensibility. His menu celebrates seasonal produce, handmade pasta and simple ingredients done exceptionally well all inspired by the warmth and generosity of Italian cooking.
John leads the kitchen with the same values that define Franca’s passion, connection and care. He’s committed to building a team culture rooted in collaboration and craft, where each dish reflects the joy of cooking and the shared experience of a great meal. His vision is to create food that feels familiar yet elevated a true expression of comfort, community and timeless hospitality.
